Living on a vegetarian diet or transitioning into raw foods diet can be scarey. Especially when you are faced with raw foods recipes or vegetarian recipes that have taken away all the 'tasty' little Raw foods takes away all gluten, wheat (flour), Dairy, cane sugars and processed foods and vegetarian takes away any meats and animal products like cheeses, milk and all dairy.....So what in the world do we eat when we are HUNGRY and our family wants  something sweet?

Answer -this ginger slice recipe! haha do you remember growing up and your Mum or Nana always making that tasty sugary sweet Ginger crumble slice...oh it was so tasty and likely the hardest one to turn down when I made the switch to a raw diet. Yesterday I decided that raw and vegetarian diets made easy wasn't that hard after all when I created this Raw Ginger Slice Recipe

The best part about this clever little creation is that it uses fresh ginger so it actually fantastic for digestion and circulation all the while you get to enjoy a tasty raw vegetarian treat!



Vegetarian Diet Made Easy - Raw Vegan Ginger Slice


Base
1.5 cups of almond flour or make your own by finely blending almonds
1/2 cup of shredded dried coconut
3 tbsp coconut oil melted
1/3 packed in cup of soaked dates ( pre soaked for two hours in room temp water)
1 tbsp agave or honey

Blend and then press into a large flat shallow tray. Place in the cooler to set for a minimum 3 hours prior to making the topping to avoid and softness occurring!

Ginger Topping
1 Cup of soaked cashews- I soak mine overnight in a bowl of water in room temperaure then drain before I use
1/4 Cup of almond milk
1/4 cup of melted coconut Oil
Grate 1.5 tbsp of fresh ginger
juice of one medium lemon
pinch of salt
1 tsp of vanilla
1/4 cup of either honey/ maple or agave syrup

Combine all ingredients except for the coconut oil and blend until smooth. Add 2 tbsp of water and continue to blend on high. Now add the coconut oil and blend until smooth. Pour over your base and set in the freezer or cooler for a few ours and your good to go!
